I was never 100% happy with the outcome, and accepted the coffee just being a bit murky and never really showing what I had in that initial cupping.
“After sorting, we sorted out roughly 2.5%. The coffee was much cleaner, the sweetness was highlighted quite a bit—and what I thought was masked by Brazilian nuttyness—the sweet apricot jammyness suddenly reappeared and made for a delicious cup.“
