From Julian at SOVDA
"We work with very good coffee, so we don't need a destoner or a color sorter."
We hear this a lot. And we get it.
You've spent years finding great farms, great importers, great lots. Saying your coffee doesn't need a sorter feels like a compliment to all that work. There's pride in it. (There should be.)
But let's look at the world's best. Onyx, Tim Wendelboe, Coffee Collective or SEY. Some of the best green there is, and every one of them still sorts on a Pearl Mini.
They don't hope a stone or a bad bean stays out of the bag. They make it their job to keep it out.
Because their most valuable asset isn't the roaster or the green. It's the name on the bag. So they protect it in everything they do, right up to the last check before sealing the bag.
And perfect is a strict word. A 12oz bag holds about 2,000 beans. 1,999 good beans and one bad one? That's not perfect anymore. The customer who finds it won't count the other 1,999.
A Pearl Mini doesn't make bad coffee good. Nothing does. What it does is give you control over what goes into your bag.
